If protector gets distroyed do I get to damage my oringinal defender?

If I destroy a protector in the defender window does my attack continue to my original proposed defender? I think its no becasue the protector is now my defender and if I use ability to kill the protector the combat just ends.

That's correct, once a protector protects it is now the defender in a combat so even if you somehow destroy it before combat resolution you don't get to "revert" to the original proposed defender.  Protecting occurs between the attack and defense priority windows and doesn't use the chain.

And i assume the same is true for armor? Say against something like Doomwalker. If they use armor to try to prevent the dmg, does it prevent it, then get destroyed?

Using armor to prevent damage does not use the chain, so the damage would be prevented then the triggered effect from Doomwalker would go onto the chain.
